花青素明胶膜的制备与表征Preparation Characterization of Anthocyanins and Gelatin Hybrid Films

摘要(Abstract):
采用热水浸提方法提取花青素,制备并表征花青素明胶膜材料.试验结果表明,紫薯花青素的添加对花青素明胶膜材料的厚度、水分和固形物含量的影响不显著;随着紫薯花青素含量的增加,膜材料中紫薯花青素与明胶分子之间的相互作用逐渐增强,紫薯花青素明胶膜材料的表面粗糙度增强,同时其热稳定性也有所提高;添加紫薯花青素能够显著提高膜材料的紫外吸收特性和抗氧化活性,对食品保藏过程中的食品氧化和紫外照射造成的食品变质有重要意义.
